Coat raw brisket generously with Wade's rub and wrap it in plastic. Let it marinate for 8 hours to overnight. Remove brisket from plastic wrap and put fat side up in a glass baking dish. Cover tightly with aluminum foil and cook covered at 300 degrees for 3 hours. After 3 hours, flip the brisket over, baste with juices, cover and continue cooking for 2 more hours. Remove foil and cook uncovered for 30 minutes or until top crisps up. Remove from oven and let brisket rest for 30 minutes loosely covered
Coat both sides of the steak generously. Marinate the steak for 30 minutes. Grill on medium to medium-high heat until done to your liking.

medium rare - 130-134
medium - 135-144
medium well - 145 - 154
well done - 155-164
